On the River Frome, evening olives and sedges bring Salmo trutta into the margins; a whole trout of 30–38 cm is the angler’s prize and the cook’s starting point. Fish taken on dry flies — a French Partridge mayfly imitation in shallow, ranunculus‑lined water — goes straight from leader to pan.
Equipment is modest: a 24–28 cm lidded frying pan, a loose double handful of clean meadow hay and a steady bank flame. Lightly oil and season the fish inside and out; tuck a sliver of butter and a lemon wedge if liked. Line the pan with a thin bed of hay, set the trout down and cover with more hay.
Three simple steps
Add a spoon of water to kick steam, cover tightly and cook over medium, then drop to low. For a 1–1.5 lb trout expect 8–12 minutes total; turn once if the pan is shallow. When the flesh flakes easily at the thickest point, rest 2 minutes.
Finish with salt, pepper, a squeeze of lemon and a dab of butter. Serve with crusty bread or new potatoes, and watch the light fade as meadow smoke drifts off the bank. A golden flank against Dorset dusk, steam rising into the night.
