Chalk‑stream Trout Poach

The chalk springs that feed the Test make watercress a natural partner for trout. The dish begins with a light broth: 750 ml fish stock or cold water, a handful of watercress, 2–3 tbsp elderflower cordial, one sliced shallot and a knob of butter. Sweat the shallot two minutes, add stock and simmer five, then stir in chopped watercress for thirty seconds and blend or leave rustic.
Technique
Keep the broth at a bare shimmer. Add a whole trout or a fillet and poach four to seven minutes depending on thickness until the flesh just turns opaque. Lift gently, pat the skin dry, then apply a bank-smoke finish: damp alder or beech twigs over embers for twenty to forty seconds to perfume the flesh without cooking.
Foraging watercress on chalk springs: seek cold, moving water over chalk or limestone, young peppery leaves in ankle to knee-deep reaches. Avoid limp or yellow plants. Elderflower brightens at the end; use cordial rather than prolonged heat so the florals stay vivid.
Serve simply with new potatoes or crusty bread. The trout flakes clean, the watercress broth keeps a pale green sheen and the brief alder smoke curls on the skin like early morning mist over the Test's shingle.
