Watercress & Test Trout Pâté
Stockbridge on the River Test — Watercress & Test brown trout pâté

Stockbridge on the River Test is trout country: clear, spring-fed chalk water where Salmo trutta cruises beneath banks of peppery watercress. This canapé honours that place with a simple, rustic pâté that keeps a bit of texture and a lot of bite.
Ingredients for 8–10: 200 g cooked or hot‑smoked brown trout (skin removed, bones checked), 100 g cream cheese, 2 tbsp crème fraîche, 1 tbsp lemon juice, 1 tbsp finely chopped dill, 2 handfuls watercress finely chopped, salt, black pepper and a little horseradish to taste. Use Test or Hampshire-caught trout when possible.
Method
Flake the trout and mash it with the cream cheese, crème fraîche and lemon until rustic — not ultra-smooth. Fold in dill and most of the watercress, reserve a few leaves for garnish. Chill at least 1 hour so the pâté firms slightly. Serve spooned on toast points, rye or toasted sourdough, finished with a sprig of watercress and a grind of pepper.
Technique & flavour notes: gently poached flesh keeps a clean river taste; hot-smoking adds depth. A touch of horseradish echoes the chalk-stream's sharpness. The pairing of trout and watercress is classic Hampshire: think Mottisfont and Houghton pools, Romsey meadows where the plant grows wild.
