A safe recipe for dried bream
Before using the recipe, we actually need a bream. It can be either freshly caught fish or bought in a store.
Gut it, remove the excess
Take the bream, remove the eyes, gills and entrails and wash the fish.
What is it for? In fact, it is rare to catch a perfectly healthy bream. This fish especially suffers from parasitic diseases.
But don't be afraid of parasites! It is enough to remove the entrails and wash the fish well.
Salt the bottom
Take a container, put salt.
Add coriander
We pour it evenly.
Coriander is added to improve the aroma and taste of the fish.
We put bream
We put our bream after adding coriander.
We salt the bream
We stuff the bream with salt:
- put salt inside the fish;
- in the gills;
- and then pour salt on the bream.
Form the next layer
Next we create a new layer:
- sprink coriander on the first layer of salted bream;
- put new fish;
- fill them with salt.
After forming the layers, fill the upper part with salt
The fish should be completely covered with salt.
For example, 7 kg of salt will be needed for 10 kg of fish.
We put the cargo and send it to the refrigerator for 7 days
Perhaps, questions will arise - why so long?
We answer - because parasites, which we cannot see with our eyes, pose a great danger. They live not only in the intestines of the bream, but also in the muscles. That is why we called this recipe safe in order to be as sure as possible that our dried fish will be completely free of parasites.
As an alternative option, you can put the fish in the freezer for 3-5 days.
Clean the fish from salt
After 7 days have passed, take out the fish and clean it under running water.
How long to wash?
The fish should stand under a small stream of water for as many HOURS as it has been salted for DAYS. That is - 7 hours.
We hang the fish for 5 days
We hang the fish in the draft, but not in the sun. We give her 5 days of time.
The fish is ready!

What to do with used salt?
- Rinse the container several times so that the salt begins to peel off from the walls.
- We put this salt in a bag and next time you can use it for the next salting!
