Preparation of fish in 6 steps
- Step 1: Before cleaning the caught fish, inspect it to make sure it is not sick.
- Step 2: Using a sharp knife, make an incision across the belly of the fish from the gills to the tail. Remove the insides.
Be careful not to damage the gall bladder to avoid bitterness in the meat.
- Step 3: Thoroughly rinse the fish under cold running water, cleaning the cavity from the remains of intestines and blood. If the fish is large, you can use a special cleaning tool.
- Step 4: If you don't plan to cook the fish immediately, pat it dry with paper towels and refrigerate, wrapping it in cling film. This will help preserve freshness and avoid an unpleasant smell.
- Step 5: Depending on your recipe and preferences, you can leave the fish whole or cut it into fillets, removing the bones.
- Step 6: If necessary, process the fish according to your recipe. You can marinate, season with spices or simply sprinkle with salt and pepper.

Fish kebab
Cut fresh fish into pieces, marinate them in olive oil, garlic, lemon juice and fresh herbs. Then string the pieces on skewers and grill. Serve with lemon.

- Make the filling - peel the avocado, remove the stone and chop it. Wash the pepper and cut it into cubes. Peel and chop the onion. Wash and chop the lettuce and cilantro. Mix in a bowl.
- We mix the sauce - yogurt, zest, cilantro (chopped) and lemon juice. Pour the sauce over the vegetables, mix, and put in the refrigerator.
- We cook the fillet - take it out of a cool place (this was step 2) and fry the fish.
- Lay out the fish on the tortilla, and put the filling in our sauce on top. We fold the tortillas in half and serve them to the fishing table.
