Ingredients
Prepare the fish
Rinse the fish thoroughly, remove the entrails and head if desired. Pat dry with paper towels and make a few shallow diagonal cuts on each side to help the flavors penetrate.
Season
Season the mackerel inside and out with salt, pepper, and fish seasoning. If you’re using lemon pepper, adjust the amount to taste.
Marinate with lemon
Slice the lemon into rounds and place several slices inside the cavity and along the sides. Wrap the fish in cling film or a sealed bag and refrigerate for 30 minutes, or up to 2 hours for a stronger lemon flavor.
Prep for baking
Preheat the oven to 180°C (350°F). Remove the mackerel from the marinade and discard most of the lemon slices, leaving 2–3 inside for aroma. Wrap the fish in a double layer of foil to retain juices.
Bake
Place the wrapped mackerel on a baking sheet and bake in the preheated oven for about 40 minutes at 180°C. Carefully open the foil when done and check that the flesh flakes easily with a fork.
Serve
Slice the fish along the backbone and divide into portions. Serve with rice, a vegetable side, fresh herbs, and a lemon wedge for extra brightness.
