Braised Crucian Carp with Sour Cream and Onion
The difference between pan-fried crucian carp in sour cream and braised crucian carp is exactly a hundred milliliters of water. With it, the sour cream stops being a coating and becomes gravy, the fish finishes cooking in liquid, and the crisp crust softens completely.
This is a trade, not a recipe mistake. In return, the crucian carp comes out softer and less dry, and there's enough gravy for a side dish — with potatoes or porridge it works better than any sauce made separately.
The onion is fried before the fish and returned at the end. Added together with the crucian carp, it would spend all twenty minutes on the heat and burn; added at the end, it stays soft and sweet.

- There won't be a crust here. The water and the lid rule it out completely. Want it crisp — cook the crucian carp without water, that's a different recipe.
- Use warm water. Cold water in a hot pan drops the temperature and stalls the process for a minute or two.
- Lay the crucian carp in a single layer. Stacked on top of each other, they don't braise, they steam, and the bottom ones fall apart.
- Cut off the heads and tails. Not for the taste, but for space: five whole crucian carp won't fit in a pan in a single layer.
- Water doesn't forgive low-fat sour cream. Low-fat sour cream thinned with water separates instantly.
