How to Fry a Whole Carp Properly
Half a centimeter is the smallest slash spacing that makes sense. Any closer and the pieces between the cuts stop holding together, and the fish falls apart in the pan. Any farther apart and whole bones remain between the slashes — the very ones that end up sticking in your throat.
For carp under a kilogram this works best. Its bones are thin, and in hot oil the cut segments reach a state where you simply don't notice them. On fish over a kilogram the technique weakens: the bones thicken faster than the frying time grows.
Lemon juice is poured on right at the end, onto the plate. Poured on before the pan, it draws out moisture and the fish takes on a worse crust — but on the finished fish it does exactly what's expected of it.
Slashes every five millimeters cut through the small bones — the same trick works on boneless crucian carp fried in a pan. Add a sauce and the same carp turns softer: carp in sour cream, pan-fried.
